Chikanda - African Polony in Groundnut Sauce

Ingredients

  • ½ Cup Chikanda Powder
  • 1 Cup Pounded Groundnuts
  • ½ Teaspoon Salt
  • ½ Teaspoon Chili Powder (Optional)
  • ¾ Teaspoon Soda (Bicarbonate of Soda)
  • 2-3 Cups Water
  • A Medium Pot
  • A Cooking Stick

Preparation

  1. Boil Water and Groundnuts: In a medium pot, pour 3-4 cups of water and add the pounded groundnuts. Stir to form a light paste and bring the mixture to a boil, stirring continuously until the groundnuts are cooked.
  2. Add Chikanda Powder: Gradually add the chikanda powder bit by bit, stirring continuously until the mixture thickens and becomes smooth.
  3. Continue Stirring: Stir vigorously with a wooden cooking stick until the chikanda turns brown and thickens to the desired consistency.
  4. Baking: Once cooked, transfer the chikanda mixture to an oven-safe pan. Bake at 400°F for 15-30 minutes, allowing the top to brown nicely.
  5. Cool and Serve: Let the chikanda cool before serving. It’s best served as a snack and can be sliced like polony.
