Chimpampila - Bean Leaves with Groundnuts

Ingredients

  • 2 Cups Chimpampila (Bean Leaves)
  • ⅓ Cup Raw Dry Pounded Groundnuts
  • 1 Medium Tomato (chopped)
  • 1 Medium Onion (chopped)
  • ¼ Teaspoon Bicarbonate of Soda
  • 1 Cup Water
  • Salt to taste

Preparation

  1. Prepare the Chimpampila: Remove the stalks from the bean leaves and wash them thoroughly.
  2. Cook the Leaves: Add 1 cup of water to a pot and throw in the prepared bean leaves along with chopped tomatoes. Cook for about 30 minutes, stirring occasionally.
  3. Add Soda and Groundnuts: Once the leaves are tender, add ¼ teaspoon of bicarbonate of soda to soften the texture. Stir in the pounded groundnuts and continue cooking, stirring occasionally, for another 30 minutes.
  4. Final Touches: Add chopped onions and salt to taste, then simmer for an additional 5 minutes to allow the flavors to meld.
